Awesome Southern Fudge

Ingredients:

  • 1 1/2 cups sugar
  • 1 can eagle brand condensed milk
  • 2 tablespoons butter
  • 1/4 teaspoon salt
  • 2 cups mini marshmallows
  • 2 cups nestle toll house semi-sweet chocolate morsels
  • 1/2 cup chopped walnuts/pecans (optional)
  • 1 teaspoon vanilla extract

Directions:

I cover my pan with aluminum foil…8x8 or 9x12 (depending on how thick you want your fudge)

Combine in a medium sauce pan…sugar, milk, butter & salt. Bring to a rolling boil over medium heat, stirring constantly for 2 to 3 minutes. Remove from heat.

Stir in morsels, marshmallows, nuts & vanilla. Continue stirring until all is melted together. Pour into prepared pan; refrigerate overnight. Lift aluminum foil from pan and turn over onto wax paper, remove foil and cut into small pieces.

July 4th Company Picnic

Summertime in the south would not be American without a good old fashioned picnic. Outdoor gatherings are a great time to get your Co-workers together and invite their families to participate in some “out of the office” sun and fun. Who would not want to come and enjoy free food and entertainment?

  We had all the traditional food:

  • Hamburgers, Hotdogs, Baked Beans, Fruit, lots of cold drinks and bottled water and of course Watermelon…and all the fixins that you can imagine

It was a beautiful day, partly sunny and a wonderful breeze that just made the day perfect…

We rented a Dunking Booth, a Bounce House, and a DJ to help make this day one that was fun and full of memories for our employees and their families. Everyone seemed to have a really good time and relaxed and soaked up some hot summer sun.

 We gave away alot of great prizes…we had gift cards to local restaurants and stores…free water pitchers…I love free stuff

so as the fun went on and we carried on (lol)… it was a great day to be with friends and family and I can’t wait to do it all again. We each met some new friends and made lots of lasting memories.

And when all is said and done…the sweet smile on a childs face will let you know that you did a good job “Well Done”.

FRESH GUACAMOLE RECIPE
10 Avocados, peeled and pitted

How to turn a large closet into a dog room for under $25

 

As all of my friends and neighbors already know, I have quite a few dogs. By quite a few, I mean, I sometimes have more dogs than the people on Animal Hoarders. I’m not ashamed that I have so many pets, because a lot of them are rescues from animal shelters. And, since I’m in a position to afford so many pets – I rescue them. A majority of my larger dogs stay outside in a kenneled area I had built especially for them. They have a shed, complete with outdoor furniture, as their dog house. So, for those of you who think dogs shouldn’t be left outside, you’re probably judging me right now, but honestly, they enjoy being outside and I play with them every day. So they aren’t, by any stretch of the imagination, neglected.

As for my smaller dogs that I keep inside, I have struggled with finding the perfect spot for all of their kennels, toys, dog food, and yes, clothes. I have moved them from one room to the other, trying to find the perfect space for them.  I have stacked their cages in my bedroom, in both of my extra bedrooms, and even my bathrooms, but no place ever seemed like the perfect space for them. Due to all of this moving around, I was forced to move my office into a not so logical place – my front closet. Yes, I had a “cloffice”, as I’ve heard it called before. Now this isn’t just any normal closet. All of the closets in my house are rather large, and this one is no different. I recently measured it, and it is 64” wide and 40” deep – in my opinion, that’s a pretty large closet.

So, I started thinking the other day – I don’t use my “cloffice” very much anymore, I should do something else with that space. So, I did. It is now the perfect space for all of my dogs and their belongings. And I’ll tell you how I did it for under $25.

These are the dimensions of my closet:

I had quite a few 2x4’s lying around in my shed outside from other projects, so I gathered these up. I measured how long they needed to be to fit inside the closet. I came up with the measurements of 64” for the long side, and two pieces needed to be 32” long for the sides.

These are the lengths I cut my boards for inside the closet:

By having the two sides measure 32”, that makes them approximately 34” long on the wall. Since the board on the back covers the entire wall and it is 2” thick. I then screwed these boards in the three walls of the closet, making a sort of frame. It is extremely important to make sure your frame is level, so get out that rarely used level when doing this step. (Always make sure you screw into a stud when screwing into a wall, especially if you plan on using this object to hold up something pretty heavy. And I consider my dogs and their cages to be pretty heavy.)

 I then went to the local hardware store and bought a piece of middle grade plywood. I think it said it was used for floors or something. I had the man there cut it 64”x36”. I took this piece home, and laid it on top of my frame and screwed it in.

This made a very large and deep shelf.

(Optional: You can always add support in the middle by simply screwing in another leg in the middle-front of the plywood.)

And my project is finished! I put all of my dog kennels on top of this shelf, stored their food bins underneath it, and put their baskets of toys and clothes on the existing shelf above them. It is the perfect place for them, and they love it!

(Optional: You can always paint the shelf to make it look more uniform with the closet. I don’t know if I plan on keeping this shelf here forever, so I didn’t paint it. But if you do decide to paint your shelf, you should caulk around the edges on top and bottom first. Caulking also gives the shelf more support.)

Although this closet is the perfect place for me to house my dogs and their things, it does have a few drawbacks. First, the doors to the closet must stay open at all times while they’re in their cages so they can receive cool air from the living room. There is not an air vent inside the closet, however there is a power outlet. So, I have installed a fan that blows the cool air from the living room, directly into their closet area to keep them cool.

Not only am I concerned with the temperature inside their closet, I am also concerned with the air quality inside their little room. We, as people, are always concerned with the air quality inside air homes. We often even blame poor air quality on our pets and the amount of hair and pet dander they release into our living environment. But do we ever stop to think that maybe we should be concerned about the air they inhale daily? Having my dogs stay in this small area, I noticed very quickly that their air quality must be poor. So, to solve this issue, I also placed a small air purifier inside the closet with them. They are now receiving cool, clean air and they couldn’t be happier – except for when they are running around in the backyard!

Fresh Fruit Salsa
1 cup strawberries, coarsely chopped
1 cup papaya, finely chopped
1 medium banana, finely diced
1 tablespoon honey
2 teaspoons raspberry vinegar
Juice of 1 lime
Dash of cayenne pepper

In a saucepan over medium heat, mix together honey, lime juice, vinegar and cayenne pepper. Heat and stir until honey is dissolved. Set aside to cool. In a medium bowl, gently toss together strawberries, papaya and bananas with cooled honey mixture. Serve with cinnamon chips.

Often mistaken for Mexican Independence Day (which is Sept. 16), Cinco de Mayo commemorates the 1862 Battle of Puebla between the victorious ragtag army of largely Mexican Indian soldiers against the invading French forces of Napoleon III. Mexican Americans, during the Chicano Movement of the 1970s, adopted the holiday for its David vs. Goliath storyline as motivation for civil rights struggles in Texas and California.
Cinco de Mayo, is very similar to how Irish-Americans celebrate St. Patrick’s Day, “this is one way they can honor their ethnicity is to celebrate this day, even when most don’t know why.” However, people all over celebrate this day. In Houston, ballet folkloric dancers will ring in Cinco de Mayo by stomping to traditional Mexican music in a city park. New York City will close parts of Spanish Harlem and Queens for street fairs as Mexican flags flap from apartment fire escapes and car antennas. Albuquerque honors the day with a Mariachi concert and free cab rides for those who show their love for Mexico with a little too much Dos Equis XX or tequila. Even West Des Moines, Iowa, has an all-day festival with Mexican food, artwork and live music.
I’m sure if you plan on going out to eat at any restaurant this night you may want to try and avoid eating Mexican, unless you have plans to go celebrate with others. As I’m sure these places will be packed with people having a good time while drinking their Margarita’s and taking shots of Tequila. Make sure you get a good meal to go along with those yummy drinks you may be drinking and able to get home safely. That’s the most important part of the night after celebrating a wonderful night of Cinco de Mayo.

While there is nothing wrong with desiring the nicest-looking fish for your aquarium, or simply being economical, there is often very little thought given to the long term “big picture.” Can your tank really hold that many fish? Will that fish outgrow the aquarium? Stocking the aquarium with either too many fish or fish that are too large can result in several issues, and can end up cost you more money in “repairs.”

If the system is overloaded, it cannot effectively provide a healthy environment for all the creatures living inside.

How to Raise Chickens in Your Backyard

 

Whether you have rural acreage, a suburban backyard or an urban lot, you may be able to raise chickens. No kidding.  So You Want a Colorful Egg Basket

The Ameraucana chicken is the one for you. I have this breed of chick and I get the prettiest color eggs.

Ameraucana and Araucana chickens are completely different breeds just as Cornish and Brahma chickens are different. Each breed is different from all the others and the differences are listed in the American Poultry Association’s Standard of Perfection. We generally refer to it as the APA Standard and it tells what characteristics or traits are needed to classify a chicken under any of many different recognized breed descriptions. The Standard is the final word in the world of exhibition poultry in North America

 

An Araucana chicken has ear tufts (not the same as muffs) and is rumpless, meaning it doesn’t have a tail. An Ameraucana has muffs and a tail. Both breeds have pea combs and lay blue eggs, but have just as many differences as similarities or common traits according to the Standard. What is referred to as an Easter Egg chicken or Easter Egger is not a recognized breed, but rather a mixed breed bird that possesses the gene for blue eggs.

How To Care For A Chick-First 60 Days:

 •Young Chick Brooder - Can be as simple as a sturdy cardboard box or a small animal cage like one you’d use for rabbits.

 •Flooring - Pine shavings work best

 •Temperature - 90 to 100 deg. for the first week, decrease 5 deg. per week.  A 100 watt bulb pointing in one corner (not the whole brooder) works well.

 •Food & water - chick crumbles / starter & a chick waterer

 •Play time - Play with your chicks when young to get the use to being around people.

 •Outside time - Section off an area in your yard where the chicks can explore, scratch, etc.  Make sure you can catch them when it’s time to come in.

 

Laying Eggs-

Chickens lay eggs during the day when they reach about six months of age. They need at least eight to ten hours of sunlight every day to lay eggs regularly.

3 packages of Instant Vanilla Pudding

5 Cups of Milk

8 oz. carton of Sour Cream

1 (13 oz.) Carton of Cool Whip

1 Box of Vanilla Wafers


Directions:

Mix all the above ingredients together excluding the vanilla wafers. Line the bottom of a serving bowl with vanilla wafers, top with pudding mix. Repeat in layers.  Chill Overnight. Garnish with sliced bananas.
